DOMAINE SAMUEL BILLAUD - CHABLIS This is our third vintageworkingwith Samuel, and once again the qualitywas out of this world. His estate has risen fromDomaineBillaud-Simon, established 1815,where for 25yearshemade thewineswithhisuncles and consultant oenologists. Yet, the family politics and enforced viticultural approach became toomuch. Like the prodigal son takinghis inheritance early, hehas forgedout onhis own,makingwines inanon-interventionist andnatural style,withaproductionofaround100,000bottles.Unliketheparable,however,hewon’tbelooking back or returning home. The reviews are in, his wines weighed and measured: they are extraordinary. We wholly agree with Neal Martin, who said: “Samuel Billaud is one of those winemakers who epitomizes great, traditional Chablis …We should see him right at the top of Chablis producers alongside the likes of Raveneau andVincentDauvissat.” Samuel’swines areastoundingandclassywines full of crystallinepurity. The2021s are elegant and very fine. He has handled this classic vintage beautifully and what seems like effortlessly. This is far fromtrue as he hand harvests thewines in small buckets, and he uses sedimentation rather thanfiltration - intervening as little as possible with the grapes andmust. All in all, the work in the winery is intense but the fruit of his labour is impressive. In the three last years, we have seen Samuel’s winesmove fromrelatively well known to some of the best in the region. He is a true tour de force inChablis!

WHITE BURGUNDY CHABLIS

CHABLIS The nose is open and inviting, showing floral notes and pure, ripe fruit. There is typical Granny smith apple and lemon zest with spicy complexity. It shows drive, energy and complexity that makes it 1er Cru level for most producers. 2024+ £268 / 12 BOTTLES CHABLIS, 1ERCRUMONTMAINS The furthest southwest of the 1er Cru sites. It is classic Chablis; herbal, green apple and oyster shell. There is fine texture, lemon zest, minerality and spice with a serious and saline finish. It canONLY be Chablis, textbook. 2025+ £448 / 12 BOTTLES CHABLIS, 1ERCRULES FOURNEAUX To the northeast of the Grand Cru hill. It ishows pretty white peach, lemon and struck match. It is fine and pure with sweet orange blossom, minerality and stone fruit. There is serious intensity here. 2025+ £448 / 12 BOTTLES CHABLIS, 1ERCRUVAILLONSVIEILLESVIGNES From a parcel right in the heart of Vaillons. It has herbal notes that give way to lemon and green apple crunch, overlaying a grassy, honeyed lift. It is very fine, floral and bright with a hint of baking spice on the long finish. 2025+ £480 / 12 BOTTLES CHABLIS, 1ERCRUMONTDEMILIEU On the Grand Cru hill, to the south east of Les Clos, from 3 parcels. It is fine, floral and pure with precision and lift. There is sweet lemon cream and hints of struck match on the finish. Give it time. 2026+ £480 / 12 BOTTLES CHABLIS, 1ERCRUMONTÉEDE TONNERRE Abuts Les Clos to the south. This is a clear step up from the other 1er Cru. There is power, balance, complexity and more fruit - green apple, lemon, white apricot and spice. It is powerful, energetic and balanced with a long creamy finish. Would beat many a Grand Cru. 2026+ £516 / 12 BOTTLES

CHABLIS, 1ERCRUVAULORENT Abuts Preuses to the north of the Grand Cru hill. It has vanilla, apricot and sweet spice. It has a broader, riper, more open palate but still serious and structured. It finishes with gunflint and apricot. 2026+ £516 / 12 BOTTLES CHABLIS, GRANDCRUBOUGROS The furthest northwest on the Grand Cru hill, immediately north of the town of Chablis. It is peachy, open and attractive with a leesy richness and white flower purity. It is sweet, bright and etheral. The finish is long, open and charming. 2028+ £505 / 6BOTTLES CHABLIS, GRANDCRUBLANCHOT To the east of Clos, following the hill around, across the valley fromMontée de Tonnerre. There is really attractive lemonflower andsherbet. It ispowerful andconcentrated, with bright, mineral richeness. It has bags of energy and drive with a really long finish. 2028+ £525 / 6BOTTLES CHABLIS, GRANDCRULES PREUSES North of the Grand Cru hill, above Bougros. It has serious chalky, gunflint, smoky notes. It is lovely, open and peachy with a silky, creamy texture. It is open, accessible and very textural and silky. It finishes long, fine grained and saline. 2028+ £525 / 6BOTTLES CHABLIS, GRANDCRUVAUDÉSIR From plots in different parts to give a balanced style. it is pretty and serious at the same time, showing elegant fruit then saline structure. It has a creamy, coconut/vanilla texture. It is broad, structured and powerful, yet effortless and fine. It is savoury, leesy and so fine. It is properly serious, all about texture and less about fruit at this point. 2028+ £525 / 6BOTTLES
