Burgundy 2021 Supplement

DOMAINE CHRISTIANMOREAU - CHABLIS Despite being a family long associated with Chablis, the Domaine leased out their 12 hectares of vineyard on a 25-year lease in 1975. On taking ownership back in 2000, they spent a couple of years settling back into things before the commercial sale of the 2002 vintage. Since then, they’ve had no reason to look back. They have 5.5 hectares of Grands Crus, including lots of Les Clos, widely regarded as the topGrandCru vineyard, and a similar holding of 1er Cru, followed by a smattering of Chablis and Petit Chablis. Les Clos vineyard now hosts 55-year-old vines, and they use 40% of oak barrels for the élévage , though only a tiny proportion of them are new. The point of this is not to install any oaky character on the flinty, minerally fruit but to allow the wine to breathe through the oak during its evolution in the barrel. These are classicallymade and classically styled Chablis of the highest order.

DOMAINE NATHALIE ET GILLES FÉVRE - CHABLIS The Fèvre family are inextricably linked to Chablis, tracing their lineage to 1745, and this is a Domaine we have worked with for many years. Gilles and Nathalie, husband and wife, are the fourth generation at the helm of this estate. Gilles and Nathalie met studying in Dijon and since 2004 have made wine together. Nathaliehadpreviouslyworkedas thewinemakerat theChablis co-operative, sosheknows theregionandits appellations verywell. Their daughter Julie, anoenologist too, is nowfront and centrewith thewinemaking. Their style is terroir driven, pure, precise and open knit, drinking beautifully almost immediately from release. They use a small amount of new oak in their top cuvées, dependent upon vintage conditions: often 20% in their 1er Crus, 30% in their GrandCrus. This adds texture and complexitywithout overpowering the terroir character of their wonderful sites, which include 1er Crus Fourchame, Vaulorent & Mont de Milieu and Les Preuses Grand Cru. These wines are energetic, vivacious, delicious and, we think, very good value. Chablis continues topunchabove itsweight compared to theCôted’Or,withGrandCruoften the sameprice as VillageMeursault. The style of the 2021s havemuchmore finesse than the previous vintage - definitely on our must buy list!

CHABLIS, 1ERCRUFOURCHAUME This is immediately easy, inviting and open, with crunchy green apple and spice. There is a lovely, creamy texture here, very well balanced with crunchy Granny Smith. It is intense and concentrated yet still easy to enjoy and delicious. It finishes with smoky, mineral gunflint finish. 2024+ £142 / 6BOTTLES
