Burgundy 2021 Supplement

OLIVIER BERNSTEIN - BEAUNE It was with great pleasure that we once again arrived to taste in the cellars of Olivier’s tradition old building within the walls of the old town of Beaune. Olivier began his business in 2007 and he is in the very unusual position ofmaking no less than seven rather grandGrandCrus aside a singleGevrey 1er Cru -most growers are delighted to work with one or two! Work in the vineyards is rigorous and micro-managed and the terroir definitionwas brilliantly characterisedduring the tasting - talk about a spirit of place. We tastedwith Richard Seguin, his vineyard manager, again this year who clearly has an intricate grasp on the direction he andOlivier are taking. He repeats the old aphorism that all the work is done in the vineyard, and it really shine through the wines. They employ, as required, short pruning, bud removal and green harvesting, to ensure those few remaining bunches ripen to theirmaximumexpression. In the winery they ferment with 60 – 80%whole bunches with gentle extraction, seeking to enhance rather than overpower the fruit. Wines spend time in individually selected barrels from Stèphane Chassin who tastes the juice to understand the requirements of his barrels: optimal level of toast and best grain of oak. We are delighted to be a recipient of an allocation, albeit small, of these excellent wines and very sought-after wines.
