DOMAINE THIBAULT LIGER-BELAIR - NUITS ST. GEORGES A visit to Thibault’s cellars is always enlightening and thrilling, so the news we wouldn’t be able to taste this vintage was met with real sadness. Few winemakers are as excited by the minutiae and micro-detail as he. Attention to detail is often cited as a reason for qualities of a particular winemaker. Thibault and his team take this to a different level. The commitment to quality begins with ensuring the long-term health of his vines. To do this he says “80% of our work is the soil, not the vines.” His philosophy - and refreshingly with Thibault it actually is one, rather than a marketing term - is encapsulated by his musings on the soil: “In the past, with chemical use, the soil was provided with potassium, iron etc as if it was a warehouse from which the factory - the vines - could draw raw materials. But it is better to think of the soil as the factory, we take care of it, keeping it organic and it provides the raw materials.” It is no surprise, he says, that with this approach the stems’ have 1.5% more mineral content in the last three years than they did 10 years ago. The whole winemaking process is carbon neutral. Upon arrival at the winery, you are greeted by a huge metal sunflower that has each petal holding solar panels to help power the winery. It is safe to assume that a winemaker that goes to these intricate lengths also ensures that his wines are the very top of the tree!
